I was following this stockings guide and but I can't thin acrylic to right amount like in the video. It's either too thin and splashed, dots everywhere or too normal and added a clear layer.

It’s mostly a feel. Once you know what it’s meant to feel like it’s never really an issue again. Also very personal, folks use very different viscosity. Don’t overthink it, try to thin the paint a bit, do two layers and reassess.
