I'm brand new to painting so maybe this is a bit ambitious but I was wondering if anyone had any tips on how to add clay to minis? Would airdry clay be the way to go? Can you use bakeable clay directly on the minis or would it have to be removed, baked separately, then glued back on? Is it feasible to slice off parts of a mini to add your own parts or would it be better for me to learn how to model?

This is the stuff you want.
Air dry clay is fine for basing, but you wouldn't want to use it for a model. If you want to do sculpting on a model green stuff is what you want.

I would definitely not use bakeable clay if you can't remove the mini because it will melt 😬.
Depending on the material the mini is made out of yes it is possible to slice pieces off . Be mindful to use proper safety equipment.
Bake-able polymer clays like Fimo, Sculpey and BeesPutty are great for minis but if you attached that to a pre-existing mini and bakes it, you’d melt the mini. Green Stuff (Kneadatite) is the common way to add stuff to minis as it air cures in a few hours and is fairly flexible. That flexibility can also be a bad thing as it can be hard to sand. Then there’s Milliput which is also air cures in a few hours but cures rock hard and can be sanded. Some people mix green stuff and Milliput together to get something kinda in the middle.
