After using some sprue glue to fill a small gap between two parts, what is the best approach to smooth out the area? What techniques do people use and what usually works the best?

Depends on the amount of detail in the way. Usually sanding with whatever implement is appropriate. Sometimes more goo if it sank in/shrank and needs built up more.
If you got a little bit of a lip where you applied goo, sanding and brushing a thin layer of clean cement over it and then making sure it does not get touched accidently 🙃
