I saw this interesting vid on how to get a interesting result on models by using sponging/stippling on the layers. How thin would you imagine i would need to go for my paint. Would this be more like a drybrush thicker paint? Or closer to traditional base coat thickness?

With stuff like this, it's best to just do it.
Grab a piece of paper, and just try it out a few times.

Thin your paint to the same consistency as you normally would for a brush, remove any excess onto a paper towel (you don’t want it super loaded or you won’t get any texture from the sponge) and then go to town.

I did something similar to this on my Chaos Knight months back and that’s how I did it.

For sponging and stippling I usually go layer consistency, thinner than a basecoat for the sake of transparency which helps with the blending effect, but thicker than a wash or glaze.
