The basline is to start off white and progressively go yellow>orange>red>black, with the balance between defining the "heat" of the flame (more white and yellow is hotter)
Try and get some reference pictures of what effect you’d like to get. As with everything the colour of the fire can be different depending on what you’re going for.
It might help too to open the photo in a photoshop program and use the colour picker to depict the colours used.
The tiniest sliver of white right at the base of the flame helps sell it as more real looking.
Sorastro Painting on YouTube has a whole series on MCP and discusses his technique for flames and smoke in a lot of the videos. I’ve found them incredibly helpful!
