So, originally, when I started playing SE:R with my friend, we had done a full run of the campaign and the DLC, however, all of the kill challenge weapons that we were supposed to unlock after completing the kill challenges and the missions said we had still not completed it.
And I have just redone a mission by myself and fully completed it yet still have not gotten the kill challenge weapon, it isn’t any specific weapon on a mission, it happens on all of them for me.

Are you sure you're doing the challenge kill in the designated way? You don't just have to kill the person, you have to do it a certain way.
For instance, for the VK-420s you have to kill Hermann Gottschalk by blowing up a gas cylinder near him https://www.youtube.com/watch?v=fzxpd7uld98
For the M1 Garand, you have to kill Ludwig Spielel when he is on the wooden platform and shoot the supports out from under him until he falls into the river https://www.youtube.com/watch?v=umNd0IB6EgA
I had this same issue where I didn't realize you had to do it a certain way, once I did it correctly they unlocked
