Well you see, you just apply this simple recursive formula infinitely many times.
A lovely formula that lets you calculate the root of k by hand.
Guess a value for the square root of k
Then plug that into the right hand side of the lower equation
Then do that again with the result

That's taking the square root of 2.
x_0 is pretty much any random number you think would be a good approximation for the square root of 2. In this case I chose 2 to show that it works even if your guess is really shitty.
Then you take your x_0 and plug it into the formula to get your x_1. Then you take that x_1 and plug it into the formula to get your x_2. And then you keep repeating that forever for more precision.
