It's basically just a taco that's primarily a grilled meat. It used to be that they'd give the shitty cuts of meat to the cowboys/rancheros so they'd use it to make fajitas and they've just kind of caught on. The origin story is very southern.

The problem is that true fajitas are beef because what kind of a cowboy herds chickens
