Is it possible to pair two devices with one pebble and switch between them? iPad and Android phone

Probably - one watch can pair to more than one device. You'll need to make sure the two devices don't fight over connection, e.g. disconnect one before connecting the other. Be aware that it'll probably clear and repopulate your watch's internal databases every time you connect to a different device

Thanks for sharing that. So are you suggesting it might clear my sleep and steps data? If so, I might just keep it paired with my iPad Mini. I've just noticed that sometimes the Pebble app gets "stuck" on iOS 18.4 (though I'm also on the beta software) when I'm looking at an app or watchface details, and I have to close and re-open it.
