You have the Crusade of Varna, John Hunyadi, Vlad the Impaler, Matthias Corvinus, a literal historical organization called the Order of the Dragon which had near the same MO as the irl Templars...
The plot is basically already written by history and Ubisoft wouldn't even need to change too many things to make the Assassins vs Templars plot work here. And you could tie it in with setting some of the plot that affects Revelations in the future.
Plus you could have your crazy off the wall Tyranny of King Washington esque dlc with Dracula and all that.
