Exciting is a matter of personal opinion. What is fun for one may not be for another. If you have done all the base game quests you like look at the DLCs.

Wrath of Druids DLC in Ireland
Siege of Paris
Fated Encounter in Isle of Skye
Dawn of Ragnarok DLC in Svartalhiem

Other than that up to you want you end up liking
