After enabling the unlimited carry weight option and using up all the "free mod access", My maximum carry weight has changed to over -200,000. No matter what I drop or how long I rest, I cannot move at all due to encumbrance.
As it is, I can't play the game at all (without the carryweight mod enabled) unless I start over.

Can you try to load your game save first without the mod? Activate the mod once the game tells you that you are carrying too much stuff. Let me know if it makes any difference.

When I start the game without the mod, my max carry weight is over -200,00, while my current party item weight is around 300. Once i activate the mod, my encumbrance debuff is removed but the number remains the same. So i can play, until the free access timer runs out.
I would like to play when the timer runs out, but the extreme encumbrance keeping my character from moving wont allow me to play even without any mods.

I'm afraid you'll have to start over to get rid of the mod effects. You could try verifying the game files on Steam to see if it makes any changes. I recommend backing up your save file first before doing so.
