I have an active pro subscription and have been on the server for a couple months now. My pro role has never activated. I've tried to disconnect and reconnect a couple times now as advised and apparently nothing's linking under the hood.

Hey Shona, Can you go try to sign into discord on your browser and confirm its the same discord you are using now.
If it is not the same one sign out of it and try again. You can also try through your phone if you use discord on there as well. You would just have to disconnect it again before attempting to pair.
