You can do as many quests as you want but I think people typically do their class story and then supplement that with planet and side quests if they're underleveled

Star Forge is the most active server so you shouldn't have problems finding a guild. There are usually guilds recruiting on starter planets, DK/Coruscant or on Fleet

Best to try to find groups and run flash points, and other group activities, and you will see plenty of guilds that would love to have you and will be doing things that you are already doing.
