Hey so im not sure if this is even possible, but I stream on twitch. And I use my own overlays and stuff ontop of my camera and gameplay. However, for editing purposes after I have done the stream for youtube, is there a way for me to get the VOD or to record that without the overlays ontop?

I use OBS for streaming, and while I am aware I could open it up twice and record one with the overlays toggled off, and then stream off the other tab I am worried about the stress it would put on OBS and my PC if I tried to record and stream at the same time while playing games. SO is there any tips or tricks that other people use? Any tools or anything that might help me out? Its made it rather difficult to make good tiktok clips or funny edits when I have a bunch of overlays on the screen, but I still want to use them on twitch.

not sure if this is the answer you're looking for but in the settings in obs under general if you scroll down there is a box you can tik to automatically record when streaming which should make a recording of whatever you do on stream at the quality settings you have set for recordings, extra bit if its useful theres a box you can tik just under that to continue recording after you end stream.

there are probably also some workarounds without streamlabs

Wouldn't recommend StreamLabs personally, but an alternative solution is OBS' lineup of plugins. One specifically being "Source Record". You apply the filter to the layer you do want to record, set the settings up and it will record in a directory of your choosing.
