I'm pretty experienced in discord servers. It also depends on what the discord is for and its intended purpose
If you are going to use emojis, I'd always put them at the start rather than the end (it keeps them straight which looks neat and tidy and is easy to look at compared to at the end)
I personally think 1 is the better layout, it's not too complicated to look at
My top tips for Servers -
Add Dyno bot and Carlbot.
You can probably just use one or the other but I choose to use Dyno for moderation, and then Carlbot for embeds, reaction roles, rules, and welcome messages.
Make sure you turned off the ability to ping everyone (otherwise you will find out after someone does it and people get mad lmao)
Make it so people have to react to a message under rules to gain access to the server
You can get bots to do some pretty cool stuff. Here's an example of the welcome message I have set for the discord server I made yesterday

Yeah, Id put the emojis before the writing, and just Put Main instead of { Main } personally

It completely depends on the type of server it is
Server for a YouTube channel, where game events are hosted and purpose is to grow a community
Made one final batch of iterations, I'm happy with any of these and just gonna choose one and move on:

I cant really choose one - they all are VERY different. could tell you like if it looks better to have the icons before the words, or stuff like that
but each one has too many differences to say which 'iteration' is best, even right down to different channels

I just want it easy to look at, assessable and a place that folks want to be active in

no need for the megaphone on the VC channels, discord already has an icon for that. Emojis look best in 1, though id change 'question of the day' to just qotd
