i do the whole thing from scratch, i make the whipped cream and everything, but im pretty sure you can just use store-bought whipped cream for the filling. you dont have to use it, but i like mixing the pastry cream and whipped cream because it makes it so much lighter and yummier. i make the whipped cream from scratch so i use 1/3 cup + 2 tbs heavy cream for it, but idk the actual ratio for store bought. make sure u eat one right after its done, they taste the best on the first day bc then the shells get a bit soggy but theyre still amazing. also, DO NOT try to make the eclairs without an electronic mixer, preferably a stand mixer. trust me, its a nightmare. good luck!!
