#Children's museum project - could use some advice

I'm overseeing a group of college students who are building an interactive tabletop display for a local children's museum. We're having a few issues and would love some advice. First, are there any vendors anyone is aware of that builds touch capable tabletop displays that are suitable for an environment filled with 5-12 year old kids? Second, this involves animated fish and the students are having trouble with interactivity. They need to fish to be attracted based on touch input, then they also need the fish to swim away and hide if the glass is tapped, and finally they want to have some random "fun" suprises as well. I mainly teach environmental design, so this has left the students to figure it out themselves. Any advice, help, links to tutorials would be appreciated.
