Dumb question, but can anyone explain grayboxing vs whiteboxing? Google only gives results to graybox "testing" and I'm not sure if that's the same thing. How does that apply to game design?

the terminology unfortunately differs between studios, but commonly it's like this: whiteboxing means using literal white boxes to represent parts of the level geometry. These are not artist-created meshes, but just very rough placeholders to block out a level.
greyboxing commonly uses the first iteration of 3d artist created meshes, or concept meshes, to get a feel for the actual architecture and also, set up the first iteration of the scene lighting
hence grey - usually you use a flat 50% grey to give the best ability to judge lighting
