I'm currently playing with a group of 3 on a very small pop server home hosted by a dedicated admin with whitelist vetting, only catch is its hosted in OCE, but we have a couple international players who get minimal lag. Server just got upgraded too.
About 7-8 active players in our community and we chat all times of day on Discord, two of us work night shift so usually someone is always online and playing

Heya, we have a new-ish dedicated server in the midwest US going if you'd like to join. 
We have maybe 4-6 active players, mostly solo/duo with some community projects planned. Half of us have played for years, half are new, but we're progressing very slowly and taking our sweet time. I think the top 2 players are at like 300-400 hours and are only in MV. Others are in stone/steam/lv.
We also have custom continental worldgen, dynmap, and FTB Utils for claims/chunkloading.

try stonehuts: its in the default list, doesnt have many online, 0-3 most of the time, nice small community, eu hosted, good admin keeping lag minimal and its been running for years so he has experience with the weird stuff 🙂
