I get front/rear balance but aren't the cars symmetrical from left to right? brakes should brake in the same way on each side and usually you adjust brake balance between front and rear

Brake balance/bias is indeed front/back, left/right balance is actually prohibited: that has to be the same. However, left is not right, and not every corner is the same. Leclerc had a massive temperature difference between left and right brakes/tyres, which likely contributed to the balance problems
