Whether or not you follow a build first time is personal preference. You don't need to but you'll prob do a bit better

Defense (resistance and life %) matters a lot late game but not so much early game. Aim for maxed resistance for fire, ice and lightning from gear and as close to 200% increased life on the passive tree as you can get by mid 70s. Picking one skill (maybe 2, single target and aoe) to focus one skill or spell is typically the best way to go since you have limited 5+ link possible gear choices (chest armor, bows, 2-handed weapons)
There's a bunch of good videos on YouTube for beginners. Engineering eternity has very good tutorials

resistances were all under 40%, so probably most of my problem.

resist flasks can be good to overcome these kinds of obstacles temporarily, but you def want to cap your resists as you approach the later acts

You want your resistances at max and close to 2k health or more (hp + es) to help with surviving those damage spikes
Doing the ascendency helps as well since they can be a big boost in offense or defense
Being over leveled can help as well since you'll have extra points to use

how do I do the ascendancy before this then? When I go look at the tablet (?) for it in town it shows the last 2 as undiscovered areas, but I've done every optional quest and main quest I know of up to this point.

There's 1 trial in act 1, 2 in act 2, and 3 in act 3. Completing those will open up the normal lab. Completing that gets you 2 ascendency points and it also gets you a random bonus affix for your gloves(maybe boots?)
The cruel version of the lab isn't doable until after act 5

Considering that so many are low lvl uniques you think many would get their first at lvl 16-21. And most high tier are typically obtained only through maps and setting maps to beyond, nemesis, etc. But on PC I feel like the flow of the game is better and you'll typically get uniques without even trying.

Level 6+ eleron will trade you 20 jewelers fir your 32 alts, a better ratio than the regular vendors. Then Vorici will give you 20 fuses for I forget how many jewelers, still better ratio than the regular vendors. You can do this once a day

Speaking of mapping and end game and such, what is most people's HP pool and dps? Lvl 79 with about 3.1k health, 2k mana, and 41-57k dps with EO and elementalist cycling.

Running dual profane wands for +36% cast speed. 4 casts per second is incredibly fast.

Are you proliferating? As in if you iginte an enemy, the ignite spreads to nearby mobs by a certin radius

It doesn't spread no. I think one of the support gems I'm using specifically says I can't ignite (even though it does when the elementalist ascendency cycles to fire)
On my 5l chest I have magma orb, echo, chance to ignite support, concentrated effect, and elemental focus (that's the one that prevents elemental ailments)
Had to turn the Xbox back on so I could make sure I got the names right

IIRC, the ranger workbench in the hideouts gives life on some gear. Does she also give resists, or is that a different vendor?

in act 4 I don't think you need any resist or life really, especially as a ranged just get more dps, but you'll need res/life for act 6 though so might as well get it now

haku gives resist on armor such as boots etc, elron does on jewelery, tora does on belts and i guess quivers

250 total life per act completed is about what the game is balanced around

I haven't bothered looking in to the pc pricing since Xbox is a different market base. From what I've seen, some stuff makes sense. Others not so much
