@ionic temple The system will automatically place you into a region based on estimated IP location, and Ping. Please make sure you are not using a VPN, since this will connect you to whatever country your VPN is set to.

there are a lot of java players from north and south america from around 4pm to 11pm pst, limiting these servers to only EU would mean you'd get a lot of laggy NA players in EU games which wouldn't be very ideal for either group

The dismantling of NA and AS servers would not be the best option for the server, Many of the players who play during 4pm-11pm PST are from North America and South America. Many Eu players also complain about the amount of lag NA players would have when they play on EU servers. This will not be a good option for both parties

They certainly do. It still averages at 1300 players every day, while it used to be much lower. (around 800)
