I'm not inherently asking for a way to completely & manually micromanage the working hours of my employees, but some way to prevent this from happening besides "hire a crazy amount of workers and hope the odds work in your favor" would be nice.

Good news on this front! There a lot of improvements to staff coming in Update 12 like smarter prioritisation as well as the ability for staff to “stack” multiple tasks together
e.g. a keeper can carry enough food to refill 3 feeders rather than returning to storage between each
In the long term, we’re also working on training that will make staff perform better depending on what their skill level is.
