Mostly because, based from the writers past lil tidbits about 3, he’s gonna be a headliner in the film, on the same level field as the main cast, just due to fandom and general liking. I think it’s a safer, and maybe even a more naturally passing down of the torch (in the event that Jim goes retirement after 3, as his big outing). That and I’m a firm believer that if written well, anything can work.

for starters, Mario has illumination behind it which already had animated movies of huge profit before the plumber (but not very good in terms of story aside from the very first Despicable Me movie imo)
And second, Mario as an IP is much stronger than that of Sonic, it's value holds by itself compared to Sonic's more inconsistent stuff.
Heck the Mario movie did not particularily please me as a movie on it's own, or even as a movie based on the videogame franchise.
