whats printed on the keycaps doesnt matter
what matters is what keyboard layout you set in your OS
the print on the keycaps is just so you know where the keys are if you use the same keyboard language in Windows as you bought as a keyboard

idk what you mean with custom keys
if you mean in wootility remap then no not really
if you set Windows to be US keyboard layout then the keyboard layout has no umlaute at all
there is no way to input them without work arounds
1 work around is using US (International) and not US for the keyboard layout
it changes how the " key works
(and some others)
so pressing " waits for the next keypress and then combines it or doesnt
i used an merikan layout wiith germen in my os and it screwed some shit up

it also works if you just set it to german in windows
just that the keycap print does not match
but its a different layoout and for eg. the enter key is different so it messes some stuff up

the key in ANSI thats above enter is the key left of the enter in ISO
the only thing "messed up" is that you are "losing" a key which is the key next to right shift on the ISO layout
on a german keyboard that is <>\
but you can remap that to the FN layer if you need it
as you can see literally just moves
and this is how your keyboard sees itself and how the PC sees the keyboard. no letters (thats what the keyboard layout in Windows handles) just numbers of the key position

US international does that with a few more things like " and ' (i think even ~)

so you can just press " and a and get ä
US international also has ways to type ß and ẞ (upper and lowercase eszett)
thats als one problen with switching from iso to ansi
ISO and ANSI is just the physical layout not the language btw
i mean typing a # sometimes
oh yeah cause youre used to hit enter higher up but now its a flat key
but yeah I suggest trying US international
its a nice solution to keep the keycap print matching
but also input any character special to languages outside of english
