Would love one of these, especially since I'm going to a 60HEv2 from an 80HE. Yes, I know FN layer is fine for the most part, but some games require a lot of F row usage or if you work with Excel a lot, it also helps.
Reason I wouldn't want to just stick to an 80HE is because the 60HE is shorter lengthwise which means better typing alignment when it's pressed against the mousepad. Also less time right hand spends moving from mouse to KB.
Or just create a 60HEv3 with a function row. 75HE.

Been using 60he for 3-4 years and i never found an issue accessing fn layers. Im still able access 2nd or 3rd layer relatively quickly and easily. If fn layer seem to be slow you can also just do mod tap (quick tap hotkey 1 = 1, long press hotkey 1 = f1

For 90% of use cases, I agree. But some games require heavy F row usage.

I know Warcraft 3, you must press insanely fast switching between heros, groups of soldiers, each group with bunch soldier that also have their own spells on different keys. Switch TAP+ F key = Guarantee lose unless you can do it under 0.1 seconds while having a bunch other keys to press.
MapleStory also needs a lot of keys. There are a tons of games that needs F row, MapleStory in particular also needs the 6 keys above the arrow key on top of the F row.
In short, smaller keyboard are good for some games but not for all. As your game library expends, unless you are willing to miss out on some of the game that your friends all play, smaller keyboard can eventually become an issue.
Or if you dedicated to only play one type of game for life time and only switch to games that does not need too many the F row, then this might never become an issue.
On top of all that, my work requires me to use the F row and the 6 keys above the arrow, and I can't see myself getting a keyboard that does not have those to begin with.
With all that said, I will suggest a full keyboard or 80% + numpad. I don't think wooting will make a 60HE V3 just from that request.
