Because i'm tired of needing to rely on the windows keybinds to change language, that I press by mistake.
I tried rebinding it to QWERTY (I use AZERTY by default) but I can't bind the 1,2,3... keys with Wooting

Keyboards don't have languages, only key numbers. Your OS decides what happens when you tap a key.
So all you can do is swap key23 with key67 and so on.

And I guess this isn't swappable with Wooting, only with the OS?
