effect of 8000 Hz polling rate on mice is well known
it does cause issues in some games like stuttering
on some system's as well
but keyboard is not that deeply investigated
it is safe option to have other choices
Keyboards don't send a constant stream of movement data. Their effect is nothing like that of a mouse on your CPU

mouse have minimal effect as well but it does cause issues on some systems

Older systems have issues with 8khz mice because it is so demanding. Not "some systems".
I have Ryzen 9800X3D and RTX 5070
and I assure you my mice Endgear op1 8khz does cause issues at max polling rate
there is lot of people who say it
a mouse at 8khz send basically 8000 packets a second when moving it
unless you press and release keys at 8000 times a second your keyboard will have basically no impact
keyboard packets just contain the newly pressed or released keys
if they dont change their state then there is basically nothing happening
Mouse input, on the other hand, is very frequently updated due to the constant stream of small changes in movement/position data
