Difference is pretty substancial not for overall power draw but for the heat production and cooling requirements on the psu:
A 600w 80+gold on 230v running at half load is rated to produce 72W of heat where a platinum rated one is rated to produce 54w of heat.
I would call that pretty significant in terms of psu fan noise.
Granted you will probably not run your psu at 100% of it's rated capacity, for a thermaly significant amount of time. but even at 50% use the difference is still 24w vs 18w.
that being said gold is generally fine.
Bronze on the other hand is rated for 45w at 50% load and a wooping 114w at 100% load

- Much faster SSD and a significantly better HDD
- one of the best air coolers (haven't yet checked if it fits inside the case though)
RAM is much more expensive, but also one of the best kits you can buy for Ryzen. It may not be worth the extra for you. You could get 32 GiB is slower RAM for less, but when you're aiming at 144Hz refresh rates, it actually starts to matter
