The worst is that the monitor is curved...so now it feels like my regular monitor curves the opposite way, now that my eyes have compensated. It feels like I'm looking at a cylinder.

It can be. Depending on your exact hardware, you can sit up for hours tweaking files and rebooting constantly to try and force the install, only to see an error message.
People tend to copy known configurations and use whoever built those's files to save time and grief

That's because Apple themselves have people staffed to make chipsets and drivers work naturally.
The Hackintosh community don't when it's the other way, so they're forced to tweak the Kernel and stuff themselves.
I'll be giving it a go once I score another SSD. Kind of out of spare drives atm. 😦

What do you mean output? Like do you want 3 analog 3.5mm outputs? Or do you mean like analog out, rca, etc
Also I doubt you’d find a mic input on a standalone dac since for mic input to work properly you’d also need an adc
I mean you might have some luck with some used studio recording equipment (or an external sound card from creative sound blaster) since most consumer stuff are just for listening.
