As I afk at work a lot, I have banked around 15k sturgeons (and way more of the others) from the 65 agil/65 str step. My cooking is at 66 so I still have 4 lvls to go. I value the usage of my hands so there's no way I'm going to cut these sturgeons with my mouse, and my phone is way too small to do it on mobile.
Any tips on how I can still convert them to caviar without getting arthritis?

Have you tried contacting your doctor? Getting arthritis or other injuries from a game is highly unusual, especially from something mild and easy as cutting fish.
I highly recommend focusing on your health and consulting a professional if you struggle to this degree.

Haha apologies I was trying to be humorous about it, I'm just not looking to cut 15k+ fish one at a time if there's a better method available

It's much slower, but you don't have to 1 tick cut the sturgeon. You can click 1 and your character will do the whole inventory, again this is very slow, and I personally wouldn't do it, but you can do it while afk I guess? At that point probably not worth it though.

do it afk on mobile at farming guild to keep up with contracts
sometimes you can actually click but otherwise you should be able to just knock out some progress while also doing your farming
either there or at fossil island for birdhouses
just knock out hourlies that keep getting you progress w/ the afk cutting because it'll cut the entire inventory (just keep offcuts in the inventory)
