These lines are appearing across this gui. Done a few other guis where this didn't happen. Any ideas?

That looks to me that there's pixels missing from your menu image?

when I edit the ascent / height values in default.json, sometimes the lines will widen a bit, by 1 or 2 pixels depending on what i do

Try resending this message in #general-plugins. Unfortunatelly, it seems that none of the people that saw your thread have the knowledge to help. Maybe you'll have the luck to find someone that has seen this issue before and knows how to fix it.
