use minecraft:give and you need to double the ' that are inside the first and last '
e.g. Lore:[''.....'']

  • 'minecraft:give %player_name% minecraft:netherite_axe{CustomModelData:10003,display:{Name:"[",{"text":"F","italic":false,"bold":true,"color":"#ff0000"},{"text":"é","italic":false,"bold":true,"color":"#de0000"},{"text":"n","italic":false,"bold":true,"color":"#bc0000"},{"text":"y","italic":false,"bold":true,"color":"#9b0000"},{"text":"k","italic":false,"bold":true,"color":"#800303"},{"text":"a","italic":false,"bold":true,"color":"#6b0909"},{"text":"r","italic":false,"bold":true,"color":"#560f0f"},{"text":"d","italic":false,"bold":true,"color":"#411515"}]"}}'

I have geniunely no idea what the problem could be.

Keep the double quotes (") as they are, and just add another single quote next to each existing single quote (' -> '')
