Hello. This is a question more suited for #general-plugins. To answer your qestion though, a plugin used to exist that did exactly this: https://www.spigotmc.org/resources/70434/. It has since been abandoned and it might not work on newer versions of Minecraft. You can try it, but I suggest you make a backup before you do. I am not aware of any other resources that might help you with the conversion so if this one doesn't work, you would have to do it manually.

I use MMOItems and in my opinion it has a decent amount of flaws. I haven’t used EI, but I’ve heard good things about it. Also, MMOItems doesn’t seem to get updated super consistently but idk if EI does either
