Once everything is running I would make your own account, and disable the root account to make it a lot harder to gain privileged access to the machine, along with the less of a chance of someone stealing or brute forcing your account password, with only limited access.

Well it depends on what you are actually doing on the vps or dedicated server.

Like if I am running 40-50 servers for a network that have hundreds of players I will go with the ssh key without a doubt.
