Hey, I need some advice on some server related stuff.

I work at an educational place where we teach students some technology related courses like video editing etc.
We recently got our hands on a SUPER powerful server, with 2 CPUs and ~256GB RAM (this is true).

We want to move from 6 seperate computers to VMs on the server, so I was thinking using some virtualization software on Ubuntu Server we could make 8+ VMs for the 6 different computers, and simply remote connect those cpmputers to the server (the computers are weak, and we want to ensure everyone has better and the same specs). Along the planning process, I came across a few possible issues.

I was thinking, on top of all the 8 VMs for the computers, we could run another VM which acts as a file server so everyone can log into whatever computer they want and they can still access thier files. We only have valid Windows 10 Home licences, and not pro, and we don't have the money to buy Windows Server, so is there any way we could still allow it to be where any user can use any computer without us needing to change the remote conenction to a previous VM, whats the best (and free) software for running VMs on Ubuntu Server and whats the best OS for a file server thing where a user can just save thier files in one centeralised place in a folder named with thier name? Would it just be possible to do like with Windows you can just share a folder to the local network?

Update - We have isolated the issue to our autoscalers for our API and Media Proxy services being unable to provision more instances to handle the normal load increase that happens during the day. We are working with Google Compute to resolve the issue.
