You should play at a variety of sensitivities. Research on the subject has consistently shown that people who practice with different sensitivities develop better hand-eye coordination. I would also recommend using different sensitivities for the same scenario. For example, doing something like 1 wall 6 targets on a high sensitivity, you will be isolating the microadjustment part of your training. On the other hand, doing 1 wall 6 targets at a low sensitivity will isolate wider arm movements. For something like thin gauntlet, playing on low sens will isolate smoothening out your arm's movements and transitioning from wrist flicking into smooth arm movement. On high sens you will isolate smoothening out and being more accurate with your wrist tracking
