I think both problems has one answer
I would recommend watching it in the replay multiple times in slow mo to see what you could have done differently
But I will give you some ideas...

Let's say you are running with the ball down the wing then you shoot it towards far post while flipping into their backboard or near post.
if your opponent has some momentum towards your shot, they will just save it towards your net while you are slamming their post or backboard.

Let's say you also running down the wing but this time you "hook around" the ball flipping through it and into the midfield...
The ball will still go fast (even if you sideflip) and even if they save it you will be there.

Now let's give an even better one...
Just shoot behind him or over him forcing him to kill his moment awkwardly and not be able to do anything after saving the shot.

if we apply the same concept to kickoff,
Let's say you see the opponent slightly on the left and about to hit the ball towards the right...
U can hit it behind him to the left "then" flip into the left.
U can hit it to the right "then" flip to the right if he won't rech it.
U can hit it into him "then" flip into the 50.
The point is you wanna save your flip until the moment when you need to use it and when u use it, use it towards the next ball.

Assuming you are using air roll left, then YES.
You only do clockwise when changing direction then do counter clockwise again to go in the new direction even more and you can do this zig zag motion with your stick to change direction multiple times but you gotta practice this with the ball tho
