they're just different ways to debuff the enemy. sinking is better when you want to lower the sanity of enemies with SP or focus more on gloom damage with those that dont have SP
tremor is better for staggering enemies and doing sloth damage from special tremor statuses that certain units provide

so just use what you want/have

and then maybe finetune based on the enemy if its hard enough
