How to "lock" some taskbar icons so when I accidentally click them they don't open? I don't want to unpin them entirely because I still want them there for aesthetic purposes.

First :
Why would you run 20H2 ? Anything post Windows 10 update 2004 is basically looking the same unlike pre update 2004
(For you recent windows users 20_04 is 2020/04, basically this version got released in April 2020, yours (20H2 got released in the second half of 2020, different naming system)
And to answer your question :
We can't natively do this, and i wouldn't recommand using 3rd party software.
