In SOTS dps spends interrupts on Wash Away instead of Water Blast, which is lethal for you. They usually are pulled in duo's, which is nice, because they always start with a Water Blast first afaik, so you can simultaneously reflect both first casts. Then assign 2 dps on one and you + dps on the other, and interrupt Water Blasts ONLY. Wash Away and Achor of Binding should never be interrupted in SOTS.
If you don't pull more than 2 Water Blast mobs, you should be perfectly fine with that. You can pull a Spiritualist on top of those, let Anchor of Binding go through and simply stun the Mending Rapids casts.

Use stuns or any other type of CC to cancel the waterblasts you dont have kicks for.

In general there's a punch of solid haste trinkets that are obtainable with a higher ilvl (vita,Rezans,Wrathion).
You can just try to do a NM/HC raid if you have the ilvl for it.
The first boss drops one of the haste trinkets already. 🙂
