But.. itās mostly because oriental dishes include rice that are somewhat sticky. Biryani rice needs to absorb water, so you measure rhat, but plain rice in India or southeast asia is usually drained.

A really long time ago, I got pneumonia, this was as a small child, I'm fine now, but there was this disgusting medicine I had to take, and I still remember its taste to this day
It tasted sortof like orange juice but the worst part amplified by 20 and with a terrible aftertaste
So the only thing I could mix it with was Gatorade, anything else would taste even worse, and the Gatorade didn't help much, so one day I ask the nurse to bring me a full bottle of Gatorade, and I pour the medicine into the Gatorade bottle, then when I tasted it it hadn't changed at all, I just had a full bottle to take now
That was the worst day I had at the hospital
And to awnser your question, it's the aftertaste, except the whole time it tasted like that

@zealous crown The trick to sauces, don't overcomplicate them, and avoid thickening with flour (unless a brick roux). They aren't going to cook for long (usually), just get the flavor where you want it then thicken with a starch slurry (I prefer potato starch)
though the apple chili sauce is gonna be based on a marinade I use for lamb. Apple Juice concentrate, some Sambal (but this time I'm gonna load it up with Aleppo pepper), some soy sauce, a little rice wine and whatever herbs I have. It'll probably simmer for about 5 minutes, I'll thicken and then it can be used on the steaks when they are done
could go for an okonomiyaki rn

I use the term interchangablty but yeah pasta and noodles are different, pasta is made from a specific type of flour

@quick root You can mix it all up in the pan or in a bowl, or you can just serve the stir fry on top of the noodles/rice and mix/eat as you desire

as for noodles vs rice, it personal prefrence. I do find if you going sesame heavy with flavoring, noodles play better. If you doing smaller sized pieces of your proteins, rice better

rinse or don't rinse, but the general "safe" way to do it, put the rice in the pot, cover it with water so when you put your finger on top of the rice, the water comes up to your first knuckle
