but it doesn't make enemies flinch so if you hit something running right at you with the sling, you then wait a second for the "standing still after I just did something for some reason" cooldown to wear off, which is not long enough to dodge them

There are certain areas in Odyssey where we're not going to allow you to use your weapons, where you interact with NPCs, you pick up missions et cetera. But once you're out in the world, it's very kind of Wild West, if you're caught by yourself in the middle of nowhere. No one's gonna know that you were ever there. You may well get killed.

Even with the online co-op, the boss fights can still be stupid

Just stopped playing Windbound, & tbh I like it. It's definitely more of a niche sort of game though. The hunger does tick down steadily, but it's still fairly lax, at least as long as you aren't constantly sprinting everywhere or trying to swim everywhere (there's a reason you build boats).
There's also no real pressure from it to run from island to island, despite what some reviews & players have said. There's usually fish not too far from the shore that, if you're patient, you can spear up and eat.
Much better to cook them first, but y'know, failing that...
