Elite dangerous is one of the best space sim games ever - it is completely different from nms in every way, but I love them both
It can be grindy, but no more than any other sim

The first night I got Railway Empire I was up to 4am 🙈 With work the next day.
I don't recall getting that sucked into a game in a long time. Even with RDR2 I knew when to call it a day.
The issue is because there's no "missions" so concept of time lessens lol

Some of those games (Like Railway Empire) can make the micromanagement too much, that's why it gets head sore. Like you could essentially have 200 trains (my max is like 30 right now) and they all can have up to 4 staff each - of which competitors can steal them (if AI is enabled)
So you're micromanaging to the nth degree
Jurassic World Evolution got it right I think! Nice simulation, with needs etc to meet, without going overboard with micromanagement
