but I'm doing NG+ everytim to increase difficulty
this was my NG++ run (3rd run)
and I did the alternate ending too, because that's more fun
but also takes more time
my NG run was 18h32m
my NG+ run was 7h50m
my NG++ run is 4h40m
but in NG and NG+ I did all optional bosses
in NG++ the only optionals I did were Oceiros and Champ Gundyr

Shadow of the Colossus actually has additional challenge modes after completion to try and defeat the colossi faster, and Last Guardian has your usual trophy stuff for little details you may have missed before

Really? Supposing I didn't have a capable PC I'd say consider:
Rare Collection, Recore, Sunset Overdrive, Ori and the Blind Forest, Ori and the Will of the Wisps, Quantum Break, Cuphead, State of Decay 2, Inside, Astroneer, Below, Ashen, any ol' splattering of crossplatform titles (e.g. Assassin's Creed Origins/Odyssey, Evil Within 1 & 2, Resident Evil 7, etc.), and like ya said, backwards compatible games.
Not exclusives exactly, sure, but there's a decent chunk of games on there as well for anyone without a solid PC to work with
And those are without dipping too far into the obvious AAA titles
