It's an interesting setting. It's more or less at the end of the Wild West era when cowboys and all that are basically extinct. Gunslingers are basically dinosaurs cuz they aren't needed. Hell, you get a Colt 1911 towards the end of the game to show how outdated you are

You're forced by the government to hunt down your old friends/gang and bring them to justice so you can see your family again, so the whole time you're doing that you see how much the West is changing. I liked the part where there's plenty of random activities and people that'll pop up when you're travelling in RDR 2. When a couple of GameSpot guys played they found random people in the middle of the woods or desert having weird problems. One of them found a dude puking his guts out in the woods, they gave him medicine, and he told em he was trying to trip balls and ate a bad plant xD
And if you find random people on the road and startle em they'll pull a gun on you and you can try to talk em down or just shoot em
Also, you do everything personally. One of the GameSpot dudes lost a bet or something to some Mexican dude, expected the cash to disappear from his inventory like a normal game, and was confused when he tried to ride away and the guy yelled at him about not handing him the money. You have to physically make your guy do stuff like that

They seem to be trying to make the game as free and immersive as possible. Mud can gunk up your guns if you fall in it, your clothing can get worn down and dirty, your hair and beard grow in real time, animals you don't kill in one hit when you're hunting will try to escape and bleed out if they're wounded enough or get so weak you have to finish them, and animals react to stuff realistically
If you skillfully kill an animal with a bow its pelt will sell for more and you'll get more meat off of it
