I like to be able to see the chat subject without opening the chat.
so naming the chat helps with that

Okay, so... in the webchat/control-ui, there's a menu on the left side. It has things like "Chat", "Overview", "Channels", "instances", "Sessions", etc. Click on "Sessions"

In that panel, you can give any session a label. (When you're done, click "chat" at the upper left to get back where you were.)
