depends how you capture it

can depend from the ingame colours using the ingame capture, think nvidia geforce capture also uses the ingame colours and then monitor caption uses the monitor setup and ingame colour

not sure about the monitor capture, but yes depends the colour when you process the image or just post raw from TN/VA monitors they dont have very alive colours compared to IPS monitors. About Oled monitor such as the samsung ones no clue but I think they're inbetween IPS and TN/VA

Well, not really. There are multiple ways to capture a screenshot. You can use the in-game button to capture the exact image that you see at that time in spectator mode (the one that I mostly use), you can use a capture program like Nvidia Shadowplay and alternatively you can use the default windows PrintScreen option. I don’t know if AMD has a capture program. 🤔
