Is there some servers with real auto balancing in BF1, it seems like every game I play is decided in the first few minutes because even when the server says "teams are unbalanced, balancing" my team is still crushing the opponent or getting crushed without any real play happening

crossplay is really something only from the last few months. for a long time crossplay was pretty infanthomable. sony wouldn't allow it, xbox tried and failed hard due not seperating the periphals per server etc. it's only now that it slowly starts to become more acceptable. maybe next gen we'll see crossplay across all 3 platforms

bf1 is tricky. in europe it only has a few conquest servers and a few operations ones. aka the fun servers. and they pretty much die down around midnight. everything else is mostly just tdm, so there is not a whole lot of space to server hop if you dont like the map or the players in it
honestly you're fine with base version imo. the premium maps or modes are pretty much dead or not played in bf1
